Sauted Green Beans

INGREDIENTS



  • 1 lb fresh green beans, cleaned and trimed

  • 1 cup Roasted Tomatoes, drained( 3 Tbsp marinade reserved)

  • 1 shallot, thiny sliced

  • 1/2 cup walnuts, chopped

  • 1/2 lemon

  • 2 Tbsp fresh parsley, chopped

  • Salt and freshly ground pepper


Method



  1. Bring a large pot of salted water to a boil then add green beans.

  2. Bring back to a boil and cook until beans are barely tender about 3-5 minutes.

  3. Drain and rinse with very cold water.

  4. Heat tomato marinade in a large saute pan over medium high heat.

  5. Add shallots and season with salt and pepper.

  6. Cook shallots until they soften and start to brown about 4-5 miutes.

  7. Add tomatoes and saute another 3 minutes.

  8. Add blanched green beans and walnuts.

  9. Season with salt and pepper and saute until beans are hot about 3-5 minutes.

  10. Just before serving, squeeze in lemmon juice and toss in fresh parsley.
