Tekin

Tekin has 30 years of experience in global chain hotels like Hilton , Intercontinental, W Hotels, Radisson Blu in many different countries as executive chef. Later on he worked as a menu developer and F&B Manager.

How to develop a restaurant menu?

  • Develop your menu concept. First and foremost, you should ask yourself what you want your restaurant to be known for.
  • Develop a list of core ingredients.
  • Investigate your supply chain.
  • Cost out your menu items.
  • Visualize your plating and glassware.
  • Run a test kitchen.

During travelling in Central Asia, Tekin had an opportunity to learn more about different ethnic ingredients and local recipes. Tekin and our co-founder Askin have known each other since 2010 when Askin was working for Nokia and Tekin was the executive chef of famous Turkish hotel chain Dedeman hotels in Tashkent, Uzbekistan.

When Tekin joined the Gurme212 team in 2018, the first thing he did was building our famous flying NPD kitchen. It is built in our frozen factory Ekofood. We call it ‘flying’ because it is a steel construction bridge between two side of office without a foundation.


Bashar

Bashar, Palestinian origin German MasterChef wants locals to feel like ethnic people and ethnic to feel like locals.

Toprak

Our master developer Toprak is a Hamburg City native and grew up in the heart of Hamburg on Mittelwig Street. He was brought up around great Mediterranean food and culture and this is where he undoubtedly picked up his affinity for Mediterranean cuisine.

He is adept in classic Italian and Mediterranean Foods with a special place in his repertoire for Classic British and French Cuisine. Nonetheless due to his Development background he is able to create contemporary food concept that are not only appealing to the eye but rewarding to taste.

You can’t imagine what we mean without trying his tastes.


TECHNICAL INNOVATION TEAM

Neslihan

Neslihan has been working for almost seven years in our company. She was head the of production previously. With her vast experience of production techniques, we thought she was a good choice as a NPD manager. Before Gurme212, Neslihan worked for 5 years in a Italian company called Macolive. She learned all the techniques how to produce the best Sicilian style sun dried tomato and how to stuff cherry peppers. When we made our first in-house dip-in-sauce competition in our factory, her recipe won the best product award. She is the mother of Gurme212’s Roasted Tomato Dip.


Elif

Elif has been with us for almost 4 years. She has a master degree in Food Engineering. Elif’s responsibility is to document all NPD Activities including preparing product specifications, process flows, HACCP and allergen risk analysis, calculating nutrition facts, making validated shelf life tests and preparing data for product labels. We proudly inform that , Elif is also a FDA on site auditor with PCQI (Preventive Controls Qualified Individual) certification.

PCQI (Preventive Controls Qualified Individual)

The Preventive Controls for Human Food regulation (often referred to as FSMA) is a law enacted to ensure safe preparation of food products for human consumption in the US in order to prevent food borne illnesses. In September of 2015 the FDA announced the deadlines for businesses to comply with the new rule. These deadlines are rapidly approaching and the law requires many businesses to be compliant with the Preventive Controls for Human Food Final Rule as early as September 2016.

The regulation requires that certain activities be performed by a Preventive Controls Qualified Individual (PCQI) who has successfully completed training in the development and application of risk-based preventive controls.

What is a PCQI?

A Preventive controls qualified individual “means a qualified individual who has successfully completed training in the development and application of risk-based preventive controls at least equivalent to that received under a standardized curriculum recognized as adequate by FDA or is otherwise qualified through job experience to develop and apply a food safety system.”


Derya

Derya is the hero preparing the samples for our customers. When we asked her to join our NPD team three years ago she was hesitantand begging us not to move her to this position. She does not believe herself that she could achieve. But time shows that she is now one of the most important member of NPD Team within the kitchen.
